Storage: Keep cookies in an airtight container at room temperature for 2-3 days, or refrigerate for up to 5 days. The glaze will set as it cools. For the best texture, let the cookies cool before glazing. A tart green apple works best, but a sweet-tart baking apple can also be used.
Preheat the oven to 350°F. Line a baking sheet with parchment paper if desired.
In a bowl, toss with , , , and until the apple pieces are evenly coated. Set aside.
In a large bowl, mix , , and until smooth and creamy.
Beat in , , and until combined.
Mix in , , , and , then slowly add and mix just until a dough forms.
Fold the coated apple mixture into the dough until evenly distributed.
Scoop the dough into about 10 large cookies and place them on the prepared baking sheet, spacing them apart.
Bake for 12-15 minutes, or until the tops start to turn golden brown. Let the cookies cool for about 20 minutes.
While the cookies cool, whisk , , and with a little at a time until the glaze is thick but still dip-able, like a thin glue consistency.
Dip the top of each cooled cookie into the glaze, then let the glaze harden for about 10 minutes before serving.
